Our kitchen brigade combine Alpine flavours and produce with the recipes and ingredients of the Mediterranean cuisine. The results never fail to delight our guests.
Our South Tyrolean, Italian & Mediterranean dishes are prepared with the greatest care, using only high-quality, rigorously local and – whenever possible – seasonal produce. This is why our South Tyrolean delicacies taste so naturally delicious: they are prepared with love for the detail.

Our fine selection of regional wines provides the perfect accompaniment for all South Tyrolean and Italian-Mediterranean recipes. Your host, Paul Zimmerhofer, is an expert in all things wine and spirits. He will be happy to help you choose the most suitable wine for your meal, and share his extensive knowledge ranging from exquisite notes, growing areas, bouquets, and all wine-related details. He is also a whisky and rum connoisseur and will doubtlessly find the right spirit to tickle your palate.

What does the Schwarzenstein ¾ board include?
Breakfast, a lunch & afternoon buffet, and a multi-course gourmet dinner in the evening. -
Is sparkling wine included at breakfast?
Yes – sparkling wine is available at the big breakfast buffet every morning. -
What are the lunch/afternoon buffet times?
Daily from 12.30 pm to 4.00 pm. -
Do you offer vegetarian / vegan / gluten / lactose options?
Our daily changing evening menu offers a selection of vegetarian dishes. Vegan dishes are only available to a very limited extent.
If you have any intolerances (e.g. lactose or gluten), we will be happy to check which alternatives are available on our menu. Please indicate any intolerances when booking.
Unfortunately, we cannot guarantee completely allergen-free preparation or the complete avoidance of traces – therefore, safe catering is not possible for severe allergies or very complex dietary requirements -
Can external guests join for dinner?
Yes – with advance reservation and subject to availability. You enjoy the same menu as our in-house guests; buffet items and non-alcoholic drinks, coffee and tea from the buffet, during meals are included. Price on request. -
Is there a dress code in the evening?
Smart casual is appreciated. Please avoid swimwear or sportswear in the restaurant.

Der Ahrntaler Graukäse gehört zur Familie der Sauermilchkäse. Sie werden durch Sauermichgerinnung, ohne Zusatz von Lab, hergestellt und seit jeher in den Tiroler Alpen verbreitet sind. Allein schon diese besonderen Eigenschaften, bezeugen den antiken Ursprung aus einer Zeit, die noch weit vor der Entstehung eigentlicher Käsereitechnologien liegt. Der Graukäse nahm einen wichtigen Platz auf der kargen Liste der Mittel zu Bestreitung des Lebensunterhalts in dem wirtschaftlich mageren Umfeld der Bergbevölkerung ein.
Und mager ist der Graukäse wirklich – vielleicht sogar der magerste aller Käse. So mager, dass der Fettgehalt in der Trockenmasse die 2% nicht überschreitet. Der Ursprung dieser Besonderheit liegt in seiner eigenen Art und Beschaffenheit. Das Ausgangsprodukt zur Herstellung von Graukäse ist das, was von der Milch nach der Butterherstellung übrigbleibt.
In Südtirol ist der Graukäse vor allem im Ahrntal und den beiden abzweigenden Tälern, Mühlwald und Weißenbach verbreitet.
Graukäse: Wiedergeburt in der Südtiroler Spitzengastronomie
Einst galt der aus saurer Magermilch hergestellte Käse als „Arme-Leute-Essen“, mittlerweile erlebt er eine Wiedergeburt in der Spitzengastronomie. Slowfood verlieh ihm sogar ein „Presidio“, die höchstmögliche Auszeichnung.
